Duck breast, honey and orange blossom sauce

Instructions

  • 1.   Prepare the duck breasts by cutting the skin in diamond shapes, deep enough but without reaching the meat.
  • 2.   Cook the duck breasts, skin side down, over medium heat for 4 minutes.
  • 3.   Then cook for 3 to 4 minutes on the meat side.
  • 4.   While cooking, prepare a mixture with a heaping tablespoon of honey and a tablespoon of orange blossom hydrosol.
  • 5.   Towards the end of cooking, remove about half of the fat and pour the honey mixture over the duck breasts.
  • 6.   Over low heat, turn the duck breasts several times so that they are fully coated with honey.
  • 7.   Serve immediately.
