Saffron Rice Salad

Instructions

  • 1.   Cook the rice the day before following the instructions on the packaging with a pinch of salt and the saffron - mix with a drizzle of oil and let cool overnight.
  • 2.   Slice the avocado and tomato.
  • 3.   Place the rice mixed with the other ingredients on a bed of lettuce.
  • 4.   Add a few dollops of pesto.
