Instructions

  • 1.   Peel and grate the carrots. Wash the cucumber, cut off the ends. Cut it into 4 lengthwise, then into 4 sections. Remove the part with the seeds. Cut the cucumber pieces (with the skin) into thin sticks. Wash the peppers. Cut off the stem, cut them into 4 quarters, then into thin slices. Remove the first skin, the beard, and the tip of the spring onion. Slice the rest. Mix all the vegetables.
  • 2.   Prepare the sauce. Squeeze the lime. Peel and grate the ginger. Mix all the sauce ingredients with 2 tablespoons of water.
  • 3.   Divide the vegetables into bowls, season each bowl with 1 tablespoon of sauce and sprinkle with chopped coriander.
