Low GI Leek Fondue

Instructions

  • 1.   Split the leeks in half lengthwise, wash them well, separating the leaves, then pat them dry.
    Finely slice them.
    Melt them over low heat with olive oil for 10 minutes, stirring often, until they are tender and translucent.
    Pour in the cream, season with salt and pepper, and mix well.
    Simmer for another 10 minutes to obtain a creamy consistency.
