Tomato and Basil Soup

Instructions

  • 1.   Cut the tomatoes, slice the onions.
  • 2.   Place everything in a pressure cooker.
  • 3.   Add the olive oil.
  • 4.   Season with salt and pepper to taste.
  • 5.   Cut the basil into pieces and add it to the pressure cooker.
  • 6.   Cover everything with water and cook for 15 to 20 minutes.
  • 7.   Blend everything together.

Notes & Suggestions

  • You can add 2 to 3 tablespoons of coconut milk to make the soup creamier.
