Instructions

  • 1.   Preheat the oven to 350°F (180°C).
  • 2.   Wash the tomatoes under cold water.
  • 3.   Cut the top off each tomato and remove the pulp.
  • 4.   Set aside the pulp on a separate plate.
  • 5.   Wash the spinach sprouts and finely chop them.
  • 6.   In a plate, mix the crushed fresh goat cheese, chopped spinach sprouts, pepper, cumin, and 0% fat cottage cheese.
  • 7.   Finally, incorporate the fresh tomato pulp, creating a complete stuffing with which you can fill each tomato.
  • 8.   Add the tomato tops back on and bake for 15 minutes at 350°F (180°C), then broil for 2 minutes.
