Celery root and Roquefort soup

Instructions

  • 1.   Peel, wash, and cut the celery root into pieces.
  • 2.   Heat the oil in a pressure cooker and sauté the celery.
  • 3.   Cover with water (just barely covering the surface) and add the bouillon cube.
  • 4.   Once the pressure valve starts to release steam, let it cook for 15 minutes.
  • 5.   Blend everything together, adding 50g of Roquefort cheese.
  • 6.   Crumble the remaining Roquefort cheese into the bowls and serve the soup hot with parsley, croutons, salt, and pepper (5 mixed peppercorns for more flavor) according to each person's taste.
  • 7.   BE CAREFUL with the salt, as the bouillon cube and Roquefort cheese are already quite salty.
