Slimming Potato Salad with Radishes and Cucumber

Instructions

  • 1.   Wash the potatoes with cold water. In a pot filled with water, add the potatoes. Bring to a boil over medium heat and let cook for 20 minutes until the potatoes are tender. Remove them and rinse them with cold water for a few minutes. Then place the cooked potatoes in a salad bowl to let them cool for 1 hour in the fridge.
  • 2.   Meanwhile, peel and slice the cucumber into thin rounds. Wash the radishes and slice them as well. Wash and finely chop the chives. Put the cucumbers, radishes, and chives in a salad bowl. Take the potatoes out of the fridge, peel them, and cut them into small cubes. Add the small potato cubes to the salad bowl. Use a spoon to mix the salad.
  • 3.   In a bowl, make a light vinaigrette by mixing the yogurt, lemon juice, mustard, and pepper with a whisk. Take the vinaigrette and sprinkle it over the salad. Mix everything well. Serve chilled.
