Mushroom omelette

Instructions

  • 1.   Prepare the mushrooms. Rinse them quickly under running water, pat them dry, and cut them into large pieces. Melt a knob of butter and sauté the minced garlic clove for 2 minutes. Add the mushrooms and let them cook for about 3 minutes, adding the washed and chopped parsley at the end.
  • 2.   Beat 2 eggs with a fork for a few seconds (stop as soon as they become frothy). Add the chopped chives, salt, and pepper.
  • 3.   Melt a knob of butter in a small frying pan and pour in the eggs. Using a fork, gently push the liquid from the edges towards the center without touching the bottom of the pan, allowing the omelette to start forming. Add a few mushrooms in the center of the pan. When the omelette starts to set, fold the top of the omelette towards the center, and do the same with the bottom. Flip the omelette and let it cook to your liking.
  • 4.   Serve very hot with a green salad, and top the omelette with mushrooms.
