Instructions

  • 1.   Peel the hard-boiled eggs and cut them in half.
  • 2.   Set aside.
  • 3.   In a bowl, combine the egg yolk, vinegar, and mustard.
  • 4.   Season with salt and whisk while slowly pouring in a drizzle of canola oil.
  • 5.   Continue whisking and stop adding oil when the mayonnaise becomes firm.
  • 6.   Fill each half of the hard-boiled egg with a generous spoonful of mustard mayonnaise.
  • 7.   Refrigerate until ready to serve.
