Instructions

  • 1.   Rinse the quinoa thoroughly under cold water. Bring a pot of salted water to a boil and add the quinoa. Cook for 15 minutes. Drain and set aside.
  • 2.   Wash and finely slice the leeks. Peel and grate the carrots. Wash, dry, and chop the parsley.
  • 3.   In a pan, heat 1 tablespoon of oil. Sauté the leeks and carrots for 15 minutes, stirring occasionally. Season with salt and pepper.
  • 4.   Mix the cooked quinoa, carrots, leeks, parsley, and whole eggs together.
  • 5.   Shape the mixture into small round patties.
  • 6.   Heat the remaining oil in a non-stick pan. Place the patties in the pan and cook for 3 minutes on each side.
  • 7.   Drain the patties on paper towels and arrange them on a plate.
  • 8.   Serve hot, warm, or cold with a green salad.
