Fresh Goat Cheese and Basil Moussaka

Instructions

  • 1.   Preheat your oven to th5 (180°C).
  • 2.   Wash the eggplants and remove the ends. Then cut them into thin slices lengthwise.
  • 3.   In a non-stick skillet, sauté the eggplant slices on both sides for a few minutes in a little oil, a pinch of salt and pepper, and then set them aside on a plate lined with paper towels.
  • 4.   In a bowl, mix the fresh goat cheese with cumin seeds and finely chopped fresh basil, lightly season with salt and pepper.
  • 5.   In an ovenproof dish, alternate a layer of pre-cooked eggplant slices, a thin layer of tomato sauce, and the fresh goat cheese.
  • 6.   Finish with a layer of eggplant slices and a thin layer of cottage cheese mixed with parmesan cheese.
  • 7.   Bake for 20 minutes.
  • 8.   You can serve this dish with a bed of lightly dressed salad.
  • 9.   Serve.

  • 4 eggplants
  • 200 ml of tomato coulis
  • 200 g of fresh goat cheese
  • 80 g of fat-free white cheese
  • 1 tablespoon of grated parmesan
  • 2 tablespoon of olive oil
  • 4 leaf of fresh basil
  • 1 pinch of cumin seed
  • salt (according to taste)
  • pepper (according to taste)
