Instructions

  • 1.   Preheat the oven to 350°F (180°C).
  • 2.   Wash the eggplants without peeling them, then grill them in the oven, turning them often until they are all blistered.
  • 3.   Plunge them into cold water, wipe them dry, cut them lengthwise and scrape out all the pulp. Put it in the mixing bowl of a food processor.
  • 4.   Peel the garlic and add it to the eggplant pulp, along with a quarter of the oil.
  • 5.   Start pulsing in the food processor, then turn it on and continue pouring the oil through the opening of the processor in a thin stream, as if making mayonnaise.
  • 6.   When all the oil is incorporated, add the lemon juice, salt, and pepper. Blend a little more.
  • 7.   Serve decorated with minced onion.
