Stuffed Zucchini with Quinoa

Instructions

  • 1.   Step 1:
  • 2.   Hollow out the zucchini, blend the pulp and set aside. Cook the zucchini in boiling water with their caps.
  • 3.   Step 2:
  • 4.   While you cook the quinoa in boiling water and the zucchini, sauté the onion, the vegetables, and the zucchini pulp.
  • 5.   Step 3:
  • 6.   Once the quinoa is cooked, incorporate it into the vegetables and add soy sauce. Fill the drained zucchini.
  • 7.   Eat immediately.
