Instructions

  • 1.   Slice the eggplants into thin rounds.
  • 2.   In a bowl, beat the cottage cheese with the cumin. Season with pepper.
  • 3.   In a frying pan, fry the eggplant rounds in olive oil for 10 minutes.
  • 4.   Preheat the oven to the broil setting.
  • 5.   Mix the eggplants with the cottage cheese.
  • 6.   Arrange the mixture in small ramekins. Place under the broiler for a few minutes to brown the top and achieve a gratin-like appearance.
  • 7.   Serve.
