Pea, Mint, and Feta Patties

Delicious vegetable patties, for a change. It's excellent!

Instructions

  • 1.   For the sauce:
  • 2.   In a bowl, mix the yogurt, lemon juice, and mint until the sauce is smooth. Season with salt, pepper, and add a drizzle of olive oil. Set aside in the fridge.
  • 3.   For the patties:
  • 4.   In a saucepan, cook the peas in boiling salted water for 4-5 minutes. Drain them in a bowl and roughly mash them with a fork.
  • 5.   In a bowl, mix the egg, onions, mint, lemon zest, feta cheese, and flour. Season with salt and pepper. Add the mashed peas and mix. Let it rest for 5 minutes, so the mixture thickens slightly, then shape the pea patties.
  • 6.   For cooking:
  • 7.   Heat oil in a frying pan. Place a patty and cook for 2 minutes on each side, until the patty is golden brown. Transfer them to a plate lined with paper towels.
  • 8.   Serve with the sauce.

  • Galettes :
  • 260 g of pea
  • 2 eggs
  • 1 untreated lemon
  • ½ onions
  • 55 g of feta
  • 30 g of Cornstarch
  • 15 g of fresh mint
  • Sauce :
  • 15 g of lemon juice
  • 1 tablespoon of olive oil
  • 15 g of fresh mint
  • 12 cl of sheep yogurt
  • 12 cl of Greek yogurt (optional)
  • salt (according to taste)
  • pepper (according to taste)
