Carrot and Coconut Soup

You can replace the coriander with blended parsley in your soup.

Instructions

  • 1.   Bring water to a boil.
    Rinse and peel the carrots, then slice them.
    Peel the onion and cut it into pieces.
    Place everything in the boiling water and add salt.
    Cook for 30 minutes over medium heat.
    Remove the vegetables from the water while keeping the water.
    In a container, blend the carrots, pour in the coconut milk and herbs, and gradually add the previously reserved water.
    Adjust the amount of water according to the desired soup consistency.
    It's ready!
