Swiss Chard and Lentil Soup

Instructions

  • 1.   Peel and chop the onion.
  • 2.   Chop the coriander.
  • 3.   Remove the germ from the garlic and crush it.
  • 4.   Peel and cut the potatoes into small cubes.
  • 5.   Cut the stems of the Swiss chard into small rectangles, and roughly chop the leaves.
  • 6.   Wash the lentils.
  • 7.   Put a little olive oil in a large pot.
  • 8.   Sauté the onions and garlic.
  • 9.   When they become translucent, add the lentils and coriander, cover with 2 liters of water, and let cook for 30 minutes covered.
  • 10.   Add the potatoes and Swiss chard, and let cook for another 15 minutes on low heat.
  • 11.   At the end of cooking, add cumin, salt, pepper, and lemon juice according to your taste.

  • 1 bunch of fresh coriander
  • 2 tablespoon of olive oil
  • 3 tablespoon of lemon juice

  • 1 pinch of freshly ground pepper
  • 1 pinch of salt
