Vegetable Tajine

All the flavors of the tajine are concentrated in this vegetarian dish. Enjoy it as is, or as a side dish with grilled red meat.

Instructions

  • 1.   Peel and slice the onion.
  • 2.   Peel and cut the carrot and zucchini into chunks.
    Quarter the tomatoes.
    Cut the bell pepper into strips.
    Pit the Agen prunes.
  • 3.   Sauté the onion in a sauté pan with olive oil for 3 minutes.
    Add the vegetables, except for the tomatoes.
    Stir for a few minutes.
  • 4.   Pour the tomatoes and prunes into the sauté pan.
    Pour in the broth (dissolve the Kub Or in 25 cl of water).
    Season with the four spices, turmeric, and cumin.
  • 5.   Simmer covered for 20 minutes.
    Toast the sliced almonds.
    Chop the cilantro leaves.
  • 6.   Sprinkle the vegetables with almonds and cilantro when serving (with couscous).

Notes & Suggestions

  • You can replace the bell pepper and chickpeas with 200 g of pumpkin.
  • Instead of the four spices, you can use 1 teaspoon of cinnamon and 1 teaspoon of ginger.

  • 8 prunes
  • 2 tablespoon of olive oil

  • 1 teaspoon of four spices
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of ground cumin
  • 50 g of sliced almond
  • 2 sprig of fresh coriander
  • ½ chickpeas (canned, drained weight)
  • 250 g of medium wheat semolina
