Instructions

. Take the half cheese, scrape the rind to remove the thin surface layer (do not remove the rind!!!).

. Take a raclette oven, or -if you are outdoors- make a fire and let the embers come, before placing the half cheese on a flat stone.

. Wait for the cheese to melt and slide it with a knife onto a plate with a potato or a slice of bread.

. Don't forget to cut the edges of the melted cheese as you go...this is called "religieuses"!
Notes & Suggestions
For a change, serve with a delicious tomato salad with ground pepper.
