Pistachio and Apricot Quinoa

Instructions

  • 1.   Put the quinoa in a saucepan with 500ml of boiling water and a pinch of salt. Bring to a boil, then reduce the heat and let simmer for 10 to 15 minutes, until the water has been absorbed and the quinoa is tender and fluffy. Transfer it to a salad bowl and let it cool.
  • 2.   Meanwhile, cut the cucumber into small pieces and cut the apricots into 6 pieces.
  • 3.   Mix all the ingredients for the dressing. When the quinoa has cooled, add the cucumber, apricots, and most of the pistachios. Drizzle with the dressing and mix carefully.
  • 4.   Sprinkle with the remaining pistachios.
    If desired, serve with arugula.

  • 200 g of quinoa
  • 1 cucumber
  • 15 dried apricots
  • 80 g of pistachio
  • 1 handful of arugula
  • 1 lemon zest
  • 1 teaspoon of ground cumin
  • 2 tablespoon of apple cider vinegar
  • 4 tablespoon of olive oil
  • 1 pinch of salt
