Green Lentil Dahl with Roasted Red Kuri Squash

Creamy Green Lentil and Cashew Dahl with Spices, topped with cubes of roasted red kuri squash.

Instructions

  • 1.   Wash the red kuri squash under water, cut it in half, remove the seeds, and cut into cubes. Put the cubes in a bowl, add cornstarch and pour a tablespoon of grapeseed oil. Mix and pour onto the grill.
  • 2.   Select the AIR FRY mode at 180°C and start cooking for 18 minutes. Mix regularly and 5 minutes before the end, add the cashews, salt, and pepper.
  • 3.   Pour a tablespoon of grapeseed oil into the other bowl, add the onion powder and spices, mix. Select the BAKE mode at 180°C and start cooking for 15 minutes. After 2 minutes, add the lentils, mix, and pour the tomato sauce and a carton of cooking cashew cream. Let it cook for 8 minutes and add the second carton of cooking cashew cream gradually, the texture should be creamy and smooth.
  • 4.   Pour everything into a large serving dish and add the cashews and roasted red kuri squash cubes. Sprinkle with fresh coriander and enjoy.

Notes & Suggestions

  • Variations: it's also delicious with roasted carrots, cauliflower, or potatoes.

  • 1 medium red kuri squash
  • 1 tablespoon of cornstarch
  • 50 g of cashew nut
  • 2 tablespoon of onion powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of coriander seed
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cinnamon powder
  • 1 pinch of chili pepper
  • 440 g of dry green lentil
  • 10 cl of tomato coulis
  • 200 ml of cashew cream
  • 2 tablespoon of fresh coriander
  • 1 drizzle of grape seed oil
  • salt (according to taste)
  • pepper (according to taste)
