1. Wash the red kuri squash under water, cut it in half, remove the seeds, and cut into cubes. Put the cubes in a bowl, add cornstarch and pour a tablespoon of grapeseed oil. Mix and pour onto the grill.
2. Select the AIR FRY mode at 180°C and start cooking for 18 minutes. Mix regularly and 5 minutes before the end, add the cashews, salt, and pepper.
3. Pour a tablespoon of grapeseed oil into the other bowl, add the onion powder and spices, mix. Select the BAKE mode at 180°C and start cooking for 15 minutes. After 2 minutes, add the lentils, mix, and pour the tomato sauce and a carton of cooking cashew cream. Let it cook for 8 minutes and add the second carton of cooking cashew cream gradually, the texture should be creamy and smooth.
4. Pour everything into a large serving dish and add the cashews and roasted red kuri squash cubes. Sprinkle with fresh coriander and enjoy.
