1. Peel and chop the onions and garlic cloves. Wash the zucchini and eggplant and cut them into cubes. Wash the tomatoes and also cut them into cubes. Wash the peppers, cut them in half, remove the seeds, and cut them into strips.
2. Pour two tablespoons of olive oil into the pot and add the harissa, mix, then add the vegetables. Mix.
3. Select the ROAST mode at 180°C and start cooking for 30 minutes, stirring regularly. After 20 minutes, add the chickpeas. Taste, adjust the seasoning, and finish cooking.
4. Prepare the sauce. Pour all the ingredients into a blender and blend. The mixture should be smooth, add lemon juice if necessary.
5. Enjoy the vegetables with the tahini sauce and sprinkle with fresh cilantro.
Notes & Suggestions
Tip: Taste because depending on the harissa, you may need to add more or sweeten it with a little honey.
Sauce: 8 cl of filtered water to add to the tahini sauce (not counted as an ingredient).
