Green lentil and mushroom stew with coconut milk

Instructions

  • 1.   Peel the onion.

    Finely slice it. Also slice the mushrooms!
  • 2.   In a sauté pan, heat the oil. Sweat the onion in it.

    Add the mushrooms and cook until the liquid is evaporated and the mushrooms are nicely browned.
  • 3.   Add the lentils and tofu to the sauté pan.

    Deglaze with 500 mL of water (or broth).

    Let simmer for about 20 minutes, stirring occasionally.
  • 4.   Add the coconut milk, salt, and pepper.
  • 5.   You can serve this dish with brown rice, or just as it is :)

  • 1 onion
  • 300 ml of coconut milk (optional)
  • 2 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
