Instructions

  • 1.   Peel the vegetables and dice them, except for the eggplants (partially peel them).
    Sauté the onions in oil, then add the bell peppers, eggplants, zucchinis, and tomatoes. Season and add the herbs.
    Let it simmer until it reaches the desired digestibility.
