Lebanese Mujadara

Instructions

  • 1.   Peel and slice the onions.

    In a pot, fry the onions in olive oil for 20 minutes, stirring with a spatula.

    Transfer the onions to a bowl and set aside.
  • 2.   Add the rice and lentils to the pot along with the bay leaf and some pepper.

    Pour 1.5 liters of cold water and cook covered for 30 minutes, stirring regularly.

    The water should be completely absorbed.
  • 3.   Towards the end of cooking, add two-thirds of the onions, season with salt, and mix.
  • 4.   Before serving the Lebanese Mujadara, sprinkle the remaining onions on top.
