Frosted Pineapple

Instructions

  • 1.   Rinse the pineapple under water. Cut it in half lengthwise. Remove the core and scoop out the flesh. Place your pineapple halves in the freezer and pour the flesh into the blender with the coconut milk. Zest a lime over it and add the juice. Blend.
    Transfer to a gratin dish and reserve in the freezer for 3 hours.
    Scrape the frozen mixture with a fork and fill the pineapple halves. Sprinkle with lime zest.
