1. Prepare and chop 300 g of onion.
2. Peel 500 g of potatoes, cut them into slices, wash and dry them.
3. In a large saucepan over medium heat, pour 4 tablespoons of olive oil.
When it is hot, add 200 g of smoked bacon and cook for 2 or 3 minutes, stirring.
4. Add the chopped onions, salt, pepper, and stir well. Cook for 1 or 2 minutes, without browning.
5. Add the sliced potatoes, salt and pepper again, then stir well. Cook covered for about 30 minutes.
6. Meanwhile, prepare 700 g of endives, without blanching them, and cut them into pieces.
7. Pour the endives into the saucepan, add the juice of ½ lemon and stir well.
Cook covered, over low heat, for 10 minutes.
8. Uncover and check the cooking of the potatoes, which should be tender, if not, let them finish cooking uncovered.
9. Serve hot, on a plate, or place the saucepan in the center of the table.
