Instructions

  • 1.   Prepare and chop 300 g of onion.
  • 2.   Peel 500 g of potatoes, cut them into slices, wash and dry them.
  • 3.   In a large saucepan over medium heat, pour 4 tablespoons of olive oil.

    When it is hot, add 200 g of smoked bacon and cook for 2 or 3 minutes, stirring.
  • 4.   Add the chopped onions, salt, pepper, and stir well. Cook for 1 or 2 minutes, without browning.
  • 5.   Add the sliced potatoes, salt and pepper again, then stir well. Cook covered for about 30 minutes.
  • 6.   Meanwhile, prepare 700 g of endives, without blanching them, and cut them into pieces.
  • 7.   Pour the endives into the saucepan, add the juice of ½ lemon and stir well.

    Cook covered, over low heat, for 10 minutes.
  • 8.   Uncover and check the cooking of the potatoes, which should be tender, if not, let them finish cooking uncovered.
  • 9.   Serve hot, on a plate, or place the saucepan in the center of the table.
