Leek and Potato Curry

Instructions

  • 1.   1. Clean and thinly slice the leeks.

    Peel and cut the potatoes into 8 pieces.
  • 2.   2. Peel and chop the ginger and turmeric.
  • 3.   3. In a sauté pan, heat the olive oil and sauté the leeks and potatoes without browning them.
  • 4.   4. Add the ginger, turmeric, and cardamom pods.

    Mix well.
  • 5.   5. Stir in the coconut milk and water.

    Season with salt and pepper and let simmer covered for 20 minutes over low heat.
  • 6.   6. Enjoy the leek and potato curry.

  • 20 cl of water
  • 2 pinch of ginger powder
  • 2 pinch of turmeric powder
  • 2 tablespoon of sunflower oil
