Instructions

  • 1.   If using raw beets, cook them in salted boiling water for 45 minutes. Drain and let rest for 15 minutes. Peel and cut into cubes.
  • 2.   Wash and steam the potatoes for 15 minutes. Rinse with cold water, peel, and cut into cubes.
  • 3.   Peel and chop the shallots. Finely chop the parsley.
  • 4.   In a salad bowl, mix the olive oil, red wine vinegar, and lemon juice. Season with salt and pepper.
  • 5.   Add the beets, potatoes, shallots, and parsley. Mix well.
  • 6.   Cover the bowl with plastic wrap and refrigerate until ready to serve.
  • 7.   Serve the salad cold, garnished with chopped parsley.

  • 2 tablespoon of olive oil
  • 1 tablespoon of wine vinegar
  • 1 tablespoon of lemon juice
