Slimming rice salad with tofu, tomatoes, and olives

A light and nutritious salad made with long grain rice and tofu, perfect for a guilt-free summer lunch. Tofu, low in calories and rich in iron, pairs perfectly with rice to provide essential nutrients.

Instructions

  • 1.   Rinse the rice with cold water to remove the starch. In a saucepan, pour 3 parts water to 1 part rice. Cook it as indicated on the package. Drain and let it cool.
  • 2.   Wash and cut the tomatoes into quarters. Cut the tofu into small cubes. In a salad bowl, mix all the salad ingredients.
  • 3.   Prepare a vinaigrette with oil, vinegar, salt, and pepper. Pour it over the salad and mix well. Keep it refrigerated.
  • 4.   Wash and chop the basil. When serving, garnish with green olives and chopped basil.

  • 30 g of green olive
  • 4 leaf of fresh basil
  • 3 tablespoon of olive oil
  • 1 tablespoon of balsamic vinegar
