Sautéed baby artichokes

Instructions

  • 1.   Squeeze the lemon juice and pour it into a bowl with 50 cl of cold water.

    Break off the stems of the artichokes and remove the toughest leaves. Slice the leaves halfway up, quarter the artichokes and remove the choke.

    Immediately immerse the artichokes in the lemon water.
  • 2.   Clean the onions and slice them. Peel and press the garlic. Rinse the tomatoes and quarter them.
  • 3.   Pour the oil into a skillet and add the drained artichokes.

    Let them brown over high heat, add the onions and garlic and mix.

    Add the tomatoes, salt, pepper.

    Let simmer for 15 minutes covered.
  • 4.   Sprinkle with thyme leaves and serve immediately.
