Carrot and Coconut Milk Soup

Instructions

  • 1.   Peel the carrots and slice them.
  • 2.   Peel and finely chop the onions.
  • 3.   Place the vegetables in a large saucepan. Add the water, spices, and coconut milk. Season with salt and pepper.
  • 4.   Cook over medium heat, covered, for about 30 minutes. The carrots should be tender.
  • 5.   Blend the carrots. Add broth to achieve the desired consistency.
