Rice bacon

Tofu, vegetables, and even coconut, you can make vegan bacon with just about anything. This technique using rice paper sheets creates a stunning visual and a delightfully crispy texture that differs from versions made with tofu, mushrooms, or tempeh, which are softer. These strips will be perfect with scrambled tofu and sautéed potatoes or sliced in half for a bacon burger.

Instructions

  • 1.   In a bowl, mix the oil and soy sauce using a small whisk. Add the liquid smoke, tomato paste, and maple syrup, mix well.
    Add the spices and mix well again. Set aside this marinade.
  • 2.   On a wooden board, place a rice paper sheet and brush both sides with hot water. Stick a second rice paper sheet on top of the first one and brush it as well. Cut into 4 or 5 strips.
    Place them on a baking sheet lined with parchment paper and brush them with the marinade on both sides.
    Also brush the edges of the strips on one side with the marinade. This will create a darker strip, a more interesting texture, and a slightly bolder taste.
  • 3.   Bake in the oven at 180°C, for about 5 to 7 minutes. The bacon strips should be well glazed but should not be overcooked, otherwise the taste becomes bitter. If the bacon is still soft when taken out of the oven, it's normal, it will firm up as it cools.
    The bacon can be stored in an airtight jar or container for 48 hours at room temperature.

  • 1 tablespoon of maple syrup
  • ¼ teaspoon of ground cumin
