Pumpkin, Smoked Tofu, and Hazelnut Quiche

Instructions

  • 1.   Dough Preparation

    In a mixing bowl, pour the flours, hazelnut butter, and oil. Add the margarine. Mix with your fingertips until you get a sandy dough. Gradually incorporate a little water until you get a smooth, flexible but not sticky dough (usually between 2 and 4 cl of water is needed).

    Chill the dough.

    Preheat the oven to 180°C (350°F).

    Filling Preparation

    Peel, core, and dice the pumpkin. Peel and finely slice the onion.

    In a saucepan, heat the oil and onion. When it becomes translucent, add the pumpkin cubes and sauté for a few minutes. Pour vegetable broth to cover the pumpkin. Let it cook for 20 minutes. Drain.

    Blend the pumpkin and the rest of the ingredients, except the hazelnuts. (Don't forget to peel the garlic clove.) Season with pepper and salt.

    Incorporate the crushed hazelnuts and mix gently.

    Roll out the dough and place it at the bottom of the tart pan(s). Prick it with a fork.

    Pour the pumpkin filling over the dough and bake for about 35 minutes.

  • 80 g of quinoa flour
  • 80 g of chestnut flour
  • 160 g of wheat flour
  • 2 tablespoon of hazelnut butter
  • 4 tablespoon of walnut oil
  • 100 g of vegetable margarine
  • Garniture :
  • 1 small red kuri squash
  • 150 g of smoked tofu
  • 100 g of silken tofu
  • 1 garlic clove
  • 1 onion
  • 1 vegetable broth
  • 1 tablespoon of cornstarch
  • 20 cl of rice cream
  • 1 tablespoon of oil
  • 2 handful of crushed hazelnut
  • salt (according to taste)
  • pepper (according to taste)
