Lentil salad with turmeric, artichoke, and tuna

Instructions

  • 1.   Rinse the lentils, put them in a saucepan, and cover them generously with cold water.

    Bring to a boil then let simmer over low heat for about 25 to 30 minutes.

    Drain them.
  • 2.   Put the lentils in a salad bowl. Add the artichoke hearts cut into pieces, then the drained and flaked tuna.
  • 3.   In a bowl, mix the mustard with the vinegar. Add the turmeric, oil, chives, salt, and pepper.

    Season the salad with this vinaigrette and serve immediately.

  • 8 g of Sherry vinegar
  • 6 g of turmeric powder
  • 20 g of olive oil
  • 20 g of chives
