Instructions

  • 1.   Cook the quinoa according to the instructions.
  • 2.   Dice the vegetables. Sauté for 7-10 minutes in a pan with a little olive oil.
  • 3.   Mix quinoa, chickpeas, and vegetables.
  • 4.   Add lemon, oil, salt, pepper. Mix and serve.
