Instructions

  • 1.   In a bowl, whisk the eggs, add the ricotta and mix
  • 2.   Add the grated cheese and the flour
  • 3.   Chop the mint and add it to the mixture with the pine nuts and then the peas
  • 4.   Season with salt & pepper
  • 5.   Pour the mixture into a buttered loaf pan
  • 6.   Bake for 40 minutes at 180°C and let it cool before serving

  • 10 leaf of fresh mint
  • 30 g of pine nut
  • 4 eggs
  • 30 g of flour
  • 400 g of ricotta
  • 4 tablespoon of olive oil
