Vegan chocolate mousse with chickpea brine

Instructions

  • 1.   Take 150 ml of chickpea brine, whisk it with a mixer in a bowl. When the mixture starts to become frothy, add the sugar gradually to "tighten" the chickpea brine.
  • 2.   Melt the chocolate (double boiler or microwave), it should be very liquid but not too hot (let it cool to room temperature)
  • 3.   Mix the melted chocolate and whipped chickpea brine together, stirring gently. Be careful, the chocolate may tend to sink to the bottom of the bowl, so make sure to scrape it well!
  • 4.   Add vanilla and fleur de sel, transfer to a large bowl or small ramekins and refrigerate for a minimum of 4 hours, the mousse will set and thicken.

  • 150 ml of chickpea juice
  • 60 g of sugar
  • 1 teaspoon of vanilla sugar
