Instructions

  • 1.   1. Wash the beets and cut off the tops without cutting into the flesh (keep a small stem).

    Place them in a pot of boiling water and cook for 40 to 60 minutes, depending on their size. They should be very tender.

    Let them cool, then peel the beets and cut them into large pieces.
  • 2.   2. Peel and finely chop the onion. Peel, remove the germ, and crush the garlic.
  • 3.   3. Heat a drizzle of olive oil in a large pot.

    Sauté the onion and garlic with a pinch of salt.
  • 4.   4. Add the beet cubes and the broth.

    Let it cook for 10 minutes. Then blend everything together. Check if you need to add salt or pepper.
  • 5.   5. Serve with a drizzle of thick or liquid sour cream.
