Instructions

  • 1.   Cook the quinoa according to the package instructions with vegetable broth.
  • 2.   Meanwhile, sauté the onions and garlic in a skillet without any fat.
  • 3.   Add the prepared vegetables (eggplants, bell peppers, carrots, or potato slices) and sauté until they develop roasted flavors.
  • 4.   Season with salt and pepper.
  • 5.   Just before serving, add the cherry tomatoes and mix everything in the skillet.
  • 6.   Mix the cooked quinoa with the roasted vegetables, incorporate the lemon juice, and garnish with fresh basil.
