Falafel (chickpea croquettes)

Instructions

  • 1.   Soak the chickpeas and fava beans in water for 12 hours, drain them, and cook them in a pressure cooker for 45 minutes.
  • 2.   Peel the onion and garlic, and chop them along with the parsley.
  • 3.   Blend the fava beans and chickpeas in a blender (or food processor).
  • 4.   Mix them with the parsley, onion, garlic, flour, spices, and salt.
  • 5.   Knead the mixture with your hands, adding a little water if necessary. Gather the dough and let it rest in the refrigerator for at least 30 minutes.
  • 6.   Shape about thirty balls the size of a 2 euro coin.
  • 7.   Fry them for 2-3 minutes, then drain them on paper towels.
  • 8.   Serve hot or cold with small tomato herb sauces or yogurt sauces.

  • 200 g of chickpeas (canned, drained weight)
  • 1 medium onion
  • 1 bunch of parsley
  • 3 flours
  • 1 teaspoon of ground cumin
  • 1 ground coriander
  • 500 g of broad bean
  • 2 garlic cloves
  • 1 paprika
  • 3 tablespoon of fresh basil
