Instructions

  • 1.   Wash, remove the stem from the tomatoes and cut them into quarters. Blend them in a food processor. Place them in a salad bowl.
  • 2.   Peel the cucumber, cut it into large cubes and blend it in the food processor. Place it with the tomatoes.
  • 3.   Peel the white onion, cut it into quarters and place it in the food processor, add the mint leaves and lemon juice. Blend and pour the mixture with the tomatoes and cucumber.
  • 4.   Add the parsley, salt, pepper, and couscous. Stir well, cover it and let it rest in the fridge for 35 minutes to allow the couscous to swell.
  • 5.   Serve chilled.
