Instructions

  • 1.   Drain and rinse the chickpeas.
  • 2.   Cut the bell pepper into small dice and mix it with the chickpeas.
  • 3.   Season with lemon juice, olive oil, crushed garlic, salt, and plenty of pepper.
  • 4.   Add fresh cilantro (or flat-leaf parsley) and cucumber, cut into small dice.

  • 1 red bell pepper
  • ½ lemon juice
  • 1 stalk of fresh coriander
  • 2 garlic cloves
  • 1 cucumber (optional)
