Vanilla Soy Milk Semolina Pudding

It's quick to make, and it's perfect to complement a light meal or to indulge in for a snack!

Instructions

  • 1.   Finely grate the zest of the lime.
  • 2.   In a saucepan, bring the milk to a boil. Reduce the heat. Add the semolina gradually, then the lime zest.
  • 3.   Thicken over very low heat for about ten minutes, stirring constantly.
  • 4.   Remove from heat. Add the sugar and mix well.
  • 5.   Pour into small pots immediately.
  • 6.   Let cool before placing the pots in the refrigerator, covered with plastic wrap to prevent the semolina from drying out.

  • 500 ml of soy milk
  • 1 tablespoon of brown sugar
