Goat cheese, zucchini, and pine nut tart

Instructions

  • 1.   Preheat the oven to 210°C (410°F). Prepare the dough: mix the oat flakes, parmesan cheese, oil, and salt until you obtain a smooth dough. If needed, add a little water. Line a tart pan with parchment paper and spread the dough.
  • 2.   Wash the zucchini (do not peel them if they are organic) and grate them into a bowl. Beat the egg and add it to the zucchini. Then add the crumbled goat cheese. Season with salt, pepper, and a little nutmeg.
  • 3.   Pour the mixture into the tart pan. Add the pine nuts and drizzle with oil. Bake for 30 minutes.
  • 4.   Serve with a green salad.

  • 400 g of zucchini
  • 1 egg
  • 150 g of fresh goat cheese
  • 1 nutmeg
  • 50 g of pine nut
  • 1 olive oil
