Sautéed Celery Root and Apples

Instructions

  • 1.   Use a small celery root or half of a large one. Peel it, cut it into pieces of 4 or 5 cm, and then slice it thinly. Ideally, use a food processor or mandoline to slice it.
  • 2.   In a high-sided pan or wok, generously add olive oil to cover the entire bottom of the pan. Add the celery root when the oil is hot, along with garlic, salt, and pepper. Stir regularly throughout the cooking process: start on high heat and then reduce to medium heat. Add the thinly sliced apples halfway through cooking. Do not cover.
  • 3.   Serve with mashed potatoes and pork, for example.
