1. Heat water and pour 1 small glass of boiling water over 2 teaspoons of green tea.
2. After one minute, discard the liquid and keep the tea. (This is to remove the initial bitterness of the tea), then pour the remaining water (it is best to have a small teapot, ideally equipped with a filter in the spout, it's easier).
3. Immediately add the fresh mint, submerging the leaves in the water (if they float, they will taste burnt and slightly bitter - with practice, you will recognize it - it's how Moroccans know when the tea is burnt).
4. Add the sugar on top.
5. Mix.
6. Pour into glasses while holding the teapot high to create a 'foamy' effect with the sugar... and drink hot.
