Moroccan mint tea

  • 1.   Heat some water, pour 1 small glass of boiling water over 2 teaspoons of green tea.
  • 2.   After a minute, discard the liquid, keep the tea. (this is to remove the first bitterness from the tea), then pour the rest of the water (you need a small teapot, ideally equipped with a filter in the spout, it's easier).
  • 3.   Then add the fresh mint, immediately drowning the leaves in water (if they float, they take on a burnt taste, a little bitter - with habit, you will recognize it - it is for Moroccans when the tea is burnt).
  • 4.   On top, add the sugars.
  • 5.   Mix.
  • 6.   We pour into the glasses, holding the teapot high to 'foam' the sugar ... and drink hot.
