Mango and passion fruit velouté

Instructions

  • 1.   Put 15 cl of cold water in a saucepan.
  • 2.   Add the sugar and bring to a boil while stirring.
  • 3.   The sugar should be completely dissolved.
  • 4.   Cut the vanilla pod lengthwise and put it in the water/sugar mixture.
  • 5.   Let it cool off the heat.
  • 6.   Peel the mangoes and cut them into large pieces.
  • 7.   Then remove the vanilla pod from the syrup saucepan.
  • 8.   In a blender, blend the syrup and mangoes.
  • 9.   Let it rest in the refrigerator for at least 1 hour.
  • 10.   Then serve in 4 glasses and place the halved passion fruits next to them.
  • 11.   Enjoy the velouté with the fruits.

  • 15 cl of water
