Instructions

  • 1.   Soak the cashews in water overnight.
  • 2.   Drain the cashews and blend them with lemon juice, 2 tablespoons of water, salt, peppercorns, and paprika. You should obtain a smooth puree consistency.
  • 3.   Pour the mixture into a bowl or ramekin and let it set in the refrigerator for 2 hours. Before serving, sprinkle Espelette pepper on top and serve as an appetizer.
